There are tons of different kinds of chocolate that are made in a ton of different ways, and just wait until you hear about white chocolate…

The Basics Of Chocolate Making & Why We Love Chocolate

October arrives, which means it's chocolate time because the cocoa beans have reached their peak ripeness and are ready for harvest! Cocoa beans are harvested through-out the fall months, ending right around the start of December. After that, the process of turning a cocoa bean into a delectable sweet treat is tedious and time-consuming. (But, oh so worth it!).

Our weekly (or daily) fix of chocolate starts at the cocoa tree, where cocoa pods are harvested and then placed between layers of banana leaves, where they will be left to dry for six days. This process is called “heaping.” After the heaping process, the cocoa beans are sent to a factory where they will be transformed into that delicious thing called chocolate that we all love so much.

Chocolate Bark

Chocolate bark is great because you get a little bit of everything. It’s the perfect combination of rich and creamy, sweet and salty, and smooth and crunchy. Chocolate bark is made by first layering a tray with all the glorious fixings that will be in the finished bar, then melting down chocolate and spreading the warm gooey deliciousness on a tray over all the topping.Chocolate bark has a history just as rich as its flavor. This delicious sweet was originally referred to as “mediants” and started as a Christmas dessert. The array of colorful nuts and dried fruits were used as a color reference of the various monastic robes—Augustinians (hazelnuts), Carmelites (almonds), Dominicans (raisins), etc.While the traditional toppings can still be found in most chocolate bark recipes today, there is now much more variety.

He decided to try and benefit from his mistake rather than start from scratch, so from there, he took the soft moldable chocolate and rolled it into small balls, later revising his recipe by adding cocoa powder, dried nuts, or fruit to the outside. It is hard to believe something so decadent was made accidentally! Nowadays, you can enjoy truffles in a ton of different forms and flavors. Butterscotch and hazelnuts are both very popular options. Chocolate Logs

Like most delicious desserts, this rolled filled sponge cake or “yule” log originated in France. It is also the oldest cake to date. It all started in the iron age of Europe in the sacred tradition of burning logs decorated with holly, pinecones, or ivy for the welcoming of the winter solstice and in celebration of the longer days to come. As time went on, and the hearths within the homes began to get smaller and smaller, it became more challenging to carry on the original tradition of burning the large decorated logs. In efforts to keep the tradition going, the yule cake or “log cake” was born and has been carried on for generations since.

It is one of the most well-known holiday desserts to this day! While this famous dessert is now more commonly referred to as a chocolate log, the basis of the recipe is the same and still just as delicious. During an experimental session in efforts to find new recipes for the upcoming holiday season, Lorusso decided to try chocolate dipped fruit out, and it was an instant hit!
